Halloween parties offer a great opportunity to have some fun in the kitchen. From making creepy cupcakes and scary cookies to a spooky soup, the possibilities are endless...
Ingredients
4 tbsp olive oil
2 onions finely chopped
1kg pumpkins or squash, peeled, deseeded and chopped into chunks
700ml vegetable stock or chicken stock
142ml tub of double cream
Sour cream thinned with a little milk for the design
Method
Heat half the olive oil in a large saucepan, then gently cook the onions for 5 minutes until soft but not coloured. Add the pumpkin or squash to the pan, then carry on cooking for 8-10 minutes, stirring occasionally until it starts to soften and turn golden.
Next...Pour the stock into the pan, then season with salt and pepper. Bring to the boil, then simmer for 10 minutes until the squash is very soft. Pour the cream into the pan, bring back to the boil, then purée with a hand blender. For an extra-velvety consistency you can push the soup through a fine sieve into another pan.
Finish with a Halloween Design, your soup is cooked and in a bowl. It's smooth and beautiful. Use thinned sour cream with a little milk inside and make a spiral design, take a little skewer and with the tip pull it through. There's your spider web soup. Enjoy!

Knife Cutting Tips
Here are just a few tips to get you chopping and slicing like the professionals...
1.Purchase good knives and keep them sharp. Learn how to use a steel or honing stone.
2.Never cut objects that are placed on unstable surfaces. This can cause accidents and unsatisfactory results. Also ensure that you have a steady footing as you work.
3.To hold the utility knife properly, keep your index finger on top of the protruding blade while holding the handing in the palm of your hand. Keep a steady grip on the knife as you work.
4.Avoid looking elsewhere or talking to people as you cut with the utility knife. This may result in accidents and your job will not be done properly.
5.When you are cutting with a utility knife, avoid using too much force. Run the knife over the object a couple of times if needed to achieve a smooth cut. Avoid going back and forth with the blade. Use smooth strokes along the length of the material. Happy chopping...

Valentine's day food for Love

So Valentine's Day is here and you're stuck yet again. What can you do differently this year? Think about it.... a good bottle of wine, candles, flowers, your favourite song in the background... mood is set.
This is just the beginning, our Valentine's day Personal Chef will create for you a bespoke menu, do the shopping, prepare and serve you if you wish, allowing you and your company to enjoy an unforgettable romantic dinner.
What more could you ask for?.
A sexy dessert - Warm chocolate volcano
3 whole eggs
3 egg yolks
4 tablespoons golden caster sugar
6 oz plain chocolate, minimum 70% cocoa
5 oz unsalted butter
8 tablespoons plain flour
6 chocolate truffles
Vanilla ice-cream or whipped cream to serve
How to make make the magic happen...
Preheat the oven to 390ºF.
Put the eggs, egg yolks and sugar into a large bowl and beat with an electric whisk for 8-10 minutes until light and fluffy.
Melt the chocolate and butter in a bain-marie.
Gently fold the flour into the egg mixture. Stir a spoonful of egg mix into the melted chocolate, then gently fold the chocolate mix into the remaining egg mix.
Put a spoonful of the mixture into each of six ramekins. Put a chocolate truffle into the centre of each, taking care not to push it down too far.
Divide the rest of the mixture between the ramekins making sure the truffle is covered. Each Ramekin should be about 3/4 full.
Bake for 10 minutes or until the top is firm and starting to rise and crack.
Remove from the ramekin and serve...Bon Appetit

Hello everyone! So it's that time of year again, the time for delicious food and treats. One particularly nice thing about Christmas is that most of us have the opportunity to enjoy food that we wouldn't normally choose to eat at any other time of the year.
With Christmas less than six weeks away, why not make the holiday season extra special and hire your own personal chef with Galor to create the ideal Christmas experience. Christmas Eve with Galor is ever the perfect way to allow you to relax and enjoy the company of your friends and family in a totally stress free environment.
Your personal chef will be experienced and able to deliver the best results for your chosen dishes, you won't have to worry about a thing!. For those of you who are far away from home, worry not. We fully cater to your needs, even if that means following one of mum's special recipes, for you, we'll do it.
The Perfect Christmas spuds:
Fluffy on the inside, golden brown on the outside. The secret is two cooking methods. Cook the potatoes in water first and then oil. The type of potato is important, you need a floury potato, but you have to cook them for as long as you possibly can without them completely disintegrating. They need to really start breaking up, so the outside's almost pureed. And then, really delicately, lift them out of the water... be careful, if you just tip the pan out they'll start pureeing because they're so soft.
Then get your oil, and make sure you've got enough - a lot of people don't put enough oil in the pan. Baste them first so they're covered in the oil, then place them in a really hot oven and keep turning them until crusty and golden brown on the outside and fluffy on the inside. There you go the Perfect Christmas spuds.

The Italian Cuisine is made up of a vast mix of different elements from the various regions of Italy. The food in the South is considered to be more spicy, with its main ingredients of tomatoes, seafood and olive oil.
The cooking in the north is mainly based on meat with heavier cream and parmesan based sauces.
In galor one of our specialities is Italian Cuisine. Below are some of the Italian dishes we recommend;
Carpachio of beef fillet – seared beef with horseradish gremolata & toasted walnuts.
Grilled pink tuna steak – pink tuna fillet with polenta accompanied by a salsa of lemon conserve, kalamata, concasse tomatoes & marjum.
Green spaghetti – leeks, zucchini, green beans, spinach, feta & olive oil.
Lasagna – our special Mediterranean recipe.
Top Tip – How to cook the perfect pasta
The sauce is always waiting for the pasta. To open the sauce you can use a little of the pasta water.
-5 liters of water and 2 spoons of rock salt for 500g pasta.
-put the salt after the first boil and wait again for another boil.
-put the pasta in at one time and mix to prevent the pasta from sticking. The cooking time for the pasta is when it starts to be white and you can easily bite it, the pasta should remain solid, al dente” this means “to the tooth” or to the bite”.
Follow these few tips and you will certainly have the perfectly cooked pasta.galor
